  • 3 very bananas, peeled and roughly chopped
  • 110 grams sugar 
  • 2 eggs, beaten
  • 1 tbsp instant coffee dissolved

Preheat the oven to 190C/170C and grease a loaf pan.

  • ½ cup white sugar

  • 2 ⅓ cups mashed overripe bananas
  • 2 eggs, beaten
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract


Set the oven to 350 degrees or 175 degrees. Grease a bread loaf pan lightly. In a bowl, combine the ingredients: salt, cinnamon, nutmeg, ginger, baking soda, and flour. Using an electric-powered mixer if you have one, combine butter, white sugar, and brown sugar in a bowl and beat till completely mixed.
